L'amphotéricine B, un polyène de couleur jaune, utilisé pour ses propriétés antifongiques. Sa structure comporte sept doubles liaisons >C=C< (conjuguées).


Polyène est le nom générique des composés organiques polyinsaturés qui possèdent au moins 2 doubles liaisons carbone-carbone et au moins 5 carbones.


Les polyènes hydrocarbonés ont pour formule générale CnH2(n-m+1) avec :


n : le nombre d'atomes de carbone dans la molécule (⩾6displaystyle geqslant 6) ;

m : le nombre de doubles liaisons carbone-carbone (⩾5displaystyle geqslant 5).

Dans certains cas, pour les nommer, on part du diène dont la structure apparaît plusieurs fois, auquel on ajoute le préfixe poly.


Exemples : polybutadiène (répétition de motifs 1,4 et 1,2), acide eicosapentaénoïque, nystatine.
